Rename templates of collection.yaml & project.yaml

In the context of editing the template of collection.yaml (see https://gitlab.gwdg.de/textplus/textplus-io/binder/develop_collection_yaml) it is a bit miscomprehensing that template and final collection.yaml have exactly the same name.
